Caramelised Red Onion Tart with Thyme and Goat’s Cheese by Kayla LaManna

Ingredients

Caramelised Onions
4 Red Onions, Sliced
2 tbsp Olive Oil
2 tbsp Balsamic Vinegar
1 tbsp Brown Sugar
Salt and Pepper (To Taste)
Tart
1 tbsp Fresh Thyme Leaves (Plus Extra For Garnish)
3 Cubes of Meredith Dairy Goat's Cheese
1 Puff Pastry Sheet (Large)
1 Egg, Beaten

Method

In a saucepan over low-medium heat, sauté your onions in olive oil, seasoning with salt and pepper. Cook until tender for around 10-15 minutes, stirring often.

Mix in your balsamic vinegar and brown sugar, and cook for a further 5 minutes until caramelised and sticky. Set aside.

Preheat the oven to 180 degrees celsius and place your puff pastry on a lined baking tray.

Cut a 2cm border around the edge of the pastry, and evenly spread your caramelised onion on the bottom and top with thyme leaves and goat's cheese.

Glaze the edge of the pastry with beaten egg, and bake in for 16-20 minutes or until golden brown.

Top with extra thyme leaves, slice and enjoy!
