Valentine’s Caramelised Red Onion Pastry Puff by Mary Kalifatidis

Ingredients

4 Small Red Onions
1 Puff Pastry
1 cup Sharp Cheese (Pecorino, Parmesan or Gruyére)
40 g Butter
1 tbsp Sugar
3 tsp Balsamic Glaze
1 tbsp Dried Thyme
Salt & Pepper

Method

Preheat oven at 200 degrees.

Line a tray with parchment paper.

Melt butter in a large frying pan, cook until butter begins to bubble.

Add your sliced onions (around 1cm thick) and cook until they begin to slightly soften. Turn them around.

Add sugar and balsamic glaze.

Add salt and dried thyme.

Set aside to cool for a while.

Roll out puff pastry and use small heart-shaped cookie cutters to cut an even number of hearts (one base and one lid per tart).

Place half of the pastry hearts onto the prepared baking tray.

Top each pastry heart with a portion of the cooled onions, leaving a small border around the edges.

Add cheese on top of the onions.

Cover each mound with a second pastry heart.

Press the edges gently (or crimp with a fork) to full seal the pastry. Add an egg glaze on top.

Bake for about 20-25 minutes until brown.
