Sausage Sizzle by Mary Kalifatidis

Ingredients
For the sausage sizzle
6 qts Beef sausages
6 qts Soft slices of fresh white bread
1 qt Tomato sauce
For the caramelised onions
4 qts Large brown onions
2 tbsp Olive oil
Method

Caramelise the Onions (do this first):
- In a large pan or on the flat plate on the BBQ, over medium-low heat, add olive oil.
- Once warm, add the onions. Cook slowly for 15–20 minutes, stirring occasionally, until soft and golden.

Cook the Sausages:
- Heat BBQ over medium heat.
- Cook sausages, turning occasionally, until browned and cooked through (about 10–12 minutes).

Assemble:
- Generously spoon caramelised onions onto bread (if you like your onions under!)
- Place a sausage on onions/bread
- Add sauce of choice (tomato, BBQ, mustard, or a mix).
